Cafes and restaurants use RO water for coffee, ice, steam ovens and dishwashing. Choosing the wrong size is the most common mistake.
1. Size for your busiest day
Add up the heaviest realistic daily water use across every point of use: coffee machines, ice makers, ovens and washing. Industry sizing guides advise sizing to the busiest day, not the average, and adding a safety margin of roughly 20 to 100 percent depending on how spiky your demand is.
2. Understand recovery
Recovery is the share of feed water that becomes clean water. Typical field recovery is roughly 67 to 75 percent. The rest goes to drain, so plan drain capacity and running costs.
3. Feed water matters
- Temperature: membranes are rated at 25 °C. Colder feed water slows output.
- TDS: higher TDS needs more pressure and lowers practical recovery. See what TDS means.
- Hardness: hard water scales membranes, so test it. Learn about softening.
4. Add a storage tank
A tank lets a smaller system refill during quiet hours and cover rush periods, so you do not need to size for the instant peak.
5. Pre-treatment is part of the plan
Sediment filters stop fouling, carbon removes chlorine that damages membranes, and softening or anti-scalant handles hardness. Skipping pre-treatment shortens membrane life.

What to ask before you buy a restaurant RO plant
A restaurant uses water for cooking, drinks, ice, dishwashing and cleaning, and each use has different quality needs. Start by listing how much water the kitchen and bar use per day and in the busiest hour. Then think about where treated water is needed: all taps, or only the coffee machine, ice machine and drinking water. Treating only what needs it keeps the plant smaller and cheaper to run.
Ask about the feed water and the pretreatment, because an RO plant is only as reliable as the water it sees. Ask about space, power, drain for reject water and noise. Ask who services the plant, how quickly spare parts arrive and whether a maintenance plan is available. A supplier who offers all of these makes the plant easier to live with.
Questions to ask your supplier
- What capacity do I need for my busiest hour?
- Do I need a storage tank to cover peak use?
- What pretreatment is recommended for my water?
- Where will reject water go, and how much is it?
- What spare parts and service are available locally?
- See industrial RO plant sizing basics.
Restaurant water questions
Do I need RO for the whole restaurant?
Not always. Many restaurants treat drinking water, coffee and ice with RO or filters and use softened or filtered water elsewhere.
How often is service needed?
It depends on usage and water. Busy kitchens need more frequent checks. A maintenance plan helps.
